If you want to involve your kids this Mother’s Day and you have budding chefs in your house why not combine the two together? With the explosion of celebrity chefs all over the television kids are more interested in cooking than ever and would love to create a Mother’s Day menu that they can cook and that Mom will love. Kids love to express their creativity in the kitchen and can learn lots of valuable lessons while cooking as well. In addition one of the biggest benefits is that kids are far more likely to eat what they have helped cook. Just remember all recipes are kid friendly but require adult supervision. So this Mother’s Day get your kids in the kitchen and try some of these recipes for Mother’s Day crafts for kids that cook(or really want to learn)-
Banana Pecan Pancakes-These simple to make pancakes are oh so yummy to eat! Both Mom and kids will love this recipe!
2 cups all purpose flour
2 tbsp. granulated sugar
4 tsp. baking powder
1-1/2 cups milk
1/4 cup vegetable oil
2 medium bananas, mashed
1/2 cup coarsely chopped pecans, toasted (see below)
additional vegetable oil for cooking
maple syrup for topping
Cooking Instructions-In a medium mixing bowl, stir together the flour, sugar and baking powder. In a separate bowl, whisk together the milk, eggs and 1/4 cup vegetable oil. Stir the milk mixture into the flour mixture, mixing just until the flour disappears (a few lumps are fine so be sure that you don’t overbeat the batter). Gently stir in the mashed bananas and the pecans. Lightly oil a skillet or griddle and place it over medium heat. Spoon in the batter(about 1/4 cup) for each pancake and cook until browned on both sides and no longer gooey in the middle, only flipping once. If you find the pancakes are still uncooked inside when the outsides are browned, lower the heat in the pan so that they cook more slowly.
Tips-Toasting pecans:Sprinkle the nuts onto a baking sheet and bake at 350degrees for 8 to 10 minutes, or just until they are lightly browned. Stir once or twice during baking time.
Makes about 15-18 4-inch pancakes
